  • A so-called "ceremony" Matcha is a higher grade of Matcha that is specially grown, harvested, and ground into powder for use in a traditional Japanese ceremony.

    Ceremonial grade Matcha is produced from the youngest and most tender tea leaves of the first harvest of the year.

    This gives you a Matcha rich in flavor, nutrients, with a unique taste and an incomparable green color.

  • Umami, which means " savory " or " delicious " in Japanese, is the fifth flavor. It creates a sensation of fullness and a lingering aftertaste in the mouth that triggers salivation. It's a pleasant flavor that makes you want to repeat the experience. Some foods have an umami flavor, such as mushrooms, parmesan cheese, or tomatoes.

  • In Japan, tea is generally produced from several selected varieties of tea plants (cultivars).
    A single cultivar is a tea that is produced using only one cultivar . Similarly, a single origin tea comes from a single growing region.


    Single cultivar and single origin teas are the expression of a terroir, and reflect the living and fluctuating character of tea. Indeed, they have the particularity of presenting some flavor variations with each new harvest. Like wine, some tea lovers enjoy discovering new vintages each year. At Noka Matcha, the Enchanteur is a single cultivar (Yabukita)

  • Much like wine, whose flavor profile is heavily influenced by the "grape variety," meaning the variety of grapes grown to produce it, the taste of matcha depends on the variety of tea plants used. These specific varieties are called "cultivars."

    To produce matcha, it is not uncommon for raw tea from different cultivars and plantations to be blended by a Tea Master to achieve a unique and consistent flavor profile over the course of the harvest. This is called a “blend.”

    The interest of the blend is therefore to guarantee that consumers find a tea with identical taste qualities every year. They can therefore count on a reference of matcha that they liked. On the other hand, each cultivar having its own characteristic, the blend also allows to balance the different flavors (sweetness, umami, bitterness, sharpness, etc.) to obtain the best matcha. At Noka Matcha, Le Prestigieux and L'Authentique are blends selected and assembled by the best Tea Masters.
