History and origin of matcha

Matcha is a Japanese green tea powder made from tea leaves grown in the shade before harvest.

After picking, the leaves intended for matcha are processed into tencha , then finely ground to obtain a particularly fine powder. Unlike a classic tea that is steeped before removing the leaves, matcha is mixed directly with water: the tea leaf is therefore consumed in its entirety .

The shading carried out before harvest plays an essential role in its identity. It notably contributes to its characteristic green color and its aromatic profile rich in floral and umami notes.

Closely linked to the history of the Japanese tea practice, matcha is now suitable for many uses. It can be enjoyed simply with water, prepared as a hot or iced latte, but also incorporated into cooking and baking.

The benefits of matcha

The particularity of matcha lies notably in the fact that we directly consume the leaf reduced to powder.

It naturally contains caffeine , L-theanine and polyphenols, among which are catechins. These different compounds are notably studied for their role in alertness, concentration and antioxidant activity.

The exact composition of a matcha can however vary according to its cultivar, its origin, the growing conditions, the harvest and its processing.

How to choose your matcha tea?

Not all matchas have the same aromatic profile or the same use.

For a traditional tasting

A ceremonial matcha is particularly suited for preparation simply whisked with water. For this type of tasting, we generally favor a matcha with a fine texture, with sweet and umami notes, with a controlled bitterness.

For a matcha latte

For a latte, you can choose a matcha with a more indulgent or expressive profile, capable of retaining its personality when associated with milk or a plant-based drink.

For cooking and baking

A culinary matcha has a more powerful character. This intensity allows the taste of the tea to remain perceptible when associated with sugar, chocolate, fats or other ingredients.

Questions about our products?

What is matcha?

Matcha is a Japanese green tea powder made from tea leaves grown in the shade before harvest. After picking, the leaves are processed into tencha and then ground into a very fine powder. Unlike steeped tea, matcha is whisked directly into water, so you consume the entire tea leaf.

What is the difference between ceremonial-grade matcha and culinary matcha?

Ceremonial matcha comes from the first harvests of the year: smooth, without bitterness and a vibrant green, it can be enjoyed plain or in a latte. Culinary matcha is more intense, it retains its flavor in pastries and recipes. Our culinary matcha, Le Pâtissier, is high quality and also makes excellent lattes.

Which matcha to choose?

New to matcha? L’Authentique, smooth and delicious, is ideal for getting started. Do you drink it plain? Le Prestigieux, rich and silky, reveals all its finesse. Do you like it in a latte? L’Enchanteur, fresh and vibrant, with a typical Japanese flavor, retains all its character when mixed with milk. For your recipes, choose Le Pâtissier. And to taste our three ceremonial matchas, discover the Trio Découverte.

Where does Nōka matcha come from, and is it organic?

Our matchas are grown and harvested in Japan on the island of Kyushu by farming families in Kagoshima, Nagasaki, and Yame. Le Prestigieux and L’Authentique are Ecocert-certified organic. L’Enchanteur is grown without pesticides. Each batch is tested by an independent laboratory, and we publish all the results.

What is a matcha refill?

A refill contains exactly the same ceremonial-grade matcha as our tins, from the same batch, in an airtight bag, without the aluminum tin. This allows you to keep your Nōka tin and refill it whenever you need to, with less packaging. Our refills are available in 30 g and 80 g sizes, for Le Prestigieux, L’Authentique, and L’Enchanteur.

What accessories do you need to prepare matcha?

Three accessories are all you need: a chasen (bamboo whisk) for whisking, a spoon for measuring, and a bowl for preparation. For lattes, our spout bowl and tasting glass make serving easy. Our matcha kit brings together all the essentials in a single set. Matcha is sold separately.

How to prepare and store your matcha?

Sift 1 to 2 g of matcha into a bowl, add 70 ml of water between 70 and 80°C, then whisk in a zigzag motion with a chasen until a fine foam forms. For a latte, add 150 to 200 ml of milk.

Then store your matcha in the refrigerator, tightly sealed: it will retain its color and flavor for 3 to 4 months after opening.

What do your matcha treats contain?

Our matcha spread contains only four ingredients: almonds, whole milk powder, sugar, and 6% matcha.

Our 5% matcha white chocolate combines whole milk powder, cocoa butter, sugar, and matcha.

The coconut version contains 4% matcha. All are artisanally made in the south of France, without additives, preservatives, or palm oil.
