Super easy almond biscuits

Here's a recipe full of the delicious flavours of almond, maple syrup and above all matcha! Super simple and quick to make, it needs no special equipment.

FOR THE BISCUITS

  • 120 g ground almonds
  • 120 g almond butter
  • 50 g maple syrup

FOR THE ICING

FOR THE BISCUITS

  1. Put all the ingredients in a large bowl and mix with a tablespoon until it forms a “dough”.
  2. Preheat the oven to 180°C
  3. Roll balls of about 20g between your palms and place them on a baking tray lined with baking paper.
  4. Press down lightly with a fork in one direction, then the other, to make a crisscross pattern.
  5. Bake for 15 minutes.
  6. Let them cool completely before removing them from the baking tray and adding the icing.

FOR THE ICING

  1. Melt the white chocolate (in a bain-marie or in the microwave).
  2. Sift the matcha over the top and mix.
  3. Dip half of each biscuit and leave to set in the fridge for about ten minutes.

Check the biscuits after 15 minutes and bake a little longer if needed.

TIP 1: You can also use peanut butter.

TIP 2: Turn the leftover matcha chocolate into a hot drink. Pour the chocolate into a saucepan and add a little oat milk. Warm for a few minutes, whisking.

These biscuits keep for a few days in an airtight tin.
