Iced Matcha Latte banana bread

We've seen the iced banana bread latte all over social media, and of course, at Nōka, we wanted to make our own matcha version! This iced latte combines the freshness of our whisked matcha with the indulgent notes of banana, cinnamon and brown sugar from banana bread, for a drink that's as comforting as it is refreshing. A must-have to put a twist on your matcha break right now 🍌

Banana bread syrup

  • One ripe banana
  • 100g of brown sugar
  • 10g of cinnamon
  • 100g of water

Latte

  • Milk of your choice
  • 3g Matcha “Le Prestigieux”
  • 70ml of water at 70°
  • Ice cubes

Caramelised banana skewers

  • 2 banana slices
  • 1 drizzle of matcha spread
  • Some banana bread syrup

Banana Bread Syrup

  1. Mash the bananas and add the other ingredients
  2. Mix all the ingredients in a bowl
  3. Heat the mixture over a low heat for 5-10min
  4. Blend everything, still on the heat, with a stick blender until smooth
  5. Pour some syrup into the bottom of your glass

Iced Latte

  1. Add ice cubes to the glass with the syrup
  2. Add the milk of your choice
  3. Prepare your matcha with 3g of Prestigieux and 70ml of hot water
  4. Pour the matcha over the ice to get a lovely layered effect

Topping

  1. Slide the two banana slices horizontally onto the skewer
  2. Spoon a little banana bread syrup over the top
  3. Lightly toast with a kitchen blowtorch
  4. Finish with a drizzle of matcha spread

A little Nōka tip: a pinch of fleur de sel in the mixture enhances all the flavours, both banana and matcha. And for an even more indulgent result, go for really ripe bananas (with a few black spots): they mash more easily and bring a naturally sweeter taste, with no need to add sugar.
